Beans with Chorizo

This chorizo bean recipe is rich in minerals and protein; it is a hearty, budget-friendly dish that is easy to prepare and can even be frozen for when you need it.

  • 2 cups white bean
  • water
  • salt
  • 3 guajillo chiles, hydrated, clean
  • 2 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • salt
  • 1/2 cups potato, in cubes
  • 1/2 cups carrot, in cubes
  • vegetable oil, to fry the chorizo
  • 1 cup chorizo

  • Place the beans in a pressure cooker, add water and salt, and cook for 25 minutes. Strain and set aside.
  • Blend the previously hydrated chiles, tomato, onion, garlic, and salt. Set aside.
  • In a skillet, add the oil and fry the chorizo, then add the carrot and potato, along with the previously strained chile sauce. Cook for 5 minutes, then add the beans and cook for another 15 minutes.
  • Serve hot and enjoy.
