Chipotle Hummus

Hummus is a popular preparation made from chickpeas and originated in the Middle East. It has a high content of plant protein, is very healthy, and versatile to accompany various dishes. This delicious recipe adds chipotle pepper and an extra touch of garlic.

  • 4 cups chickpeas
  • water
  • 3/4 cups tahini
  • 3 tablespoons lemon juice
  • 1 clove garlic
  • salt
  • 4 chipotle chiles in adobo sauce
  • olive oil
  • garlic, chopped

  • Place the chickpeas in a pressure cooker, cover with enough water so that it exceeds the chickpeas by about 10 cm, close and cook for 1.5 hours until soft.
  • Once cooked, blend the chickpeas in a processor for 5 minutes until it becomes a paste. Add tahini, yellow lemon juice, the garlic clove, and season with salt; if you need to give it a little more creaminess, add a couple of tablespoons of cold water.
  • Finely chop the chipotle pepper, add everything to the hummus and mix.
  • Serve the hummus with olive oil, chipotle pepper, and chopped dehydrated garlic.
