Pork Beans with Jalapeño

This delicious recipe for pork beans is perfect for breakfast or lunch.

  • 2 1/2 cups pinto bean, cooked and blended
  • 1 cup chorizo, pork
  • 2 cups Monterey Jack cheese, grated
  • 1/4 cups pickled Jalapeño chile, chopped
  • 1 tablespoon lard
  • queso fresco, crumbled, for garnish
  • chorizo, fried, for garnish
  • hot sauce, Tabasco style
  • tortilla chips, corn

  • In a skillet, fry the chorizo and cook for 5 minutes or until golden brown.
  • Pour in the beans and when they start to boil, add the grated cheese and the chili, mix to incorporate all the ingredients and to melt the cheese. Add the lard and cook for 5 more minutes.
  • Serve, garnish with fresh cheese and fried chorizo. Accompany with hot sauce (Tabasco style) and corn tortilla chips. Enjoy.
