Charro Beans Durango Style

This is my version of charro beans modified from the state of Durango.

  • 1 1/2 liters beans, cooked
  • 1 onion, medium
  • 3 Jalapeño chiles, finely chopped
  • tomatoes, to taste
  • 15 milliliters olive oil
  • 150 grams chorizo, pork
  • 100 grams turkey sausage
  • 100 grams turkey deli ham
  • 75 grams smoked bacon
  • 5 grams ground cumin
  • salt, to taste
  • fresh cilantro, to taste

  • Boil a liter of beans with a little extra water and blend the rest along with the cumin and add it.
  • Chop everything finely into 1 cm cubes. The sausage into slices 1/2 cm thick.
  • Sauté the bacon, and when it releases its fat, add the sausage and turkey ham to the pot of beans, then sauté the jalapeño and onion along with the pork chorizo in olive oil, add salt to taste and let it boil for 10 minutes.
