Classic Guacamole in Molcajete

Guacamole is one of the most well-known dishes both inside and outside of Mexico; this classic guacamole includes ingredients such as serrano chili, tomato, onion, and cilantro, seasoned with olive oil and a little tangy lime juice. The word guacamole comes from the Nahuatl ahuacamulli, from ahuacatl and mulli meaning mashed or sauce.

  • 1/2 white onions, finely chopped
  • 1/2 cups fresh cilantro, finely chopped
  • 1 tablespoon coarse salt
  • 2 avocados, cut into cubes
  • 2 tomatoes, finely chopped without seeds
  • 2 serrano chiles, finely chopped
  • 2 tablespoons olive oil
  • 1/4 cups lime juice
  • corn tortillas, for accompaniment
  • chapulines, for accompaniment

  • Place one tablespoon of onion, one tablespoon of cilantro, and salt in the molcajete. Mash until a paste forms, add the avocado and mash again.
  • Add the remaining onion and cilantro, the tomato, and the serrano chili. Season with olive oil and lime juice.
  • Serve with corn tortilla chips and chapulines.
