Ingredients: 1/2 white onions, finely chopped; 1/2 cups fresh cilantro, finely chopped; 1 tablespoon coarse salt; 2 avocados, cut into cubes; 2 tomatoes, finely chopped without seeds; 2 serrano chiles, finely chopped; 2 tablespoons olive oil; 1/4 cups lime juice; corn tortillas, for accompaniment; chapulines, for accompaniment

Place one tablespoon of onion, one tablespoon of cilantro, and salt in the molcajete. Mash until a paste forms, add the avocado and mash again. Add the remaining onion and cilantro, the tomato, and the serrano chili. Season with olive oil and lime juice.
