Guacamole is one of the most popular dishes both inside and outside of Mexico, this classic guacamole has among its ingredients serrano peppers, tomatoes, onions and cilantro, seasoned with olive oil and a touch of lemon juice. The word guacamole comes from Nahuatl ahuacamulli, from ahuacatl and mulli from ground or sauce.

Ingredients

6 portions
  • 1/2 white onions, finely chopped
  • 1/2 cups fresh coriander, finely chopped
  • 1 tablespoon sea salt
  • 2 avocados, cut into cubes
  • 2 tomatoes, finely chopped without seeds
  • 2 serrano peppers, finely chopped
  • 2 tablespoons olive oil
  • 1/4 cups lemon juice
  • enough corn tortilla, To accompany
  • to taste grasshoppers, To accompany

Preparation

Place a spoonful of onion, a spoonful of coriander and salt in the molcajete. Crush to a paste, place the avocado and crush again.
Add the onion and the remaining cilantro, the tomato and the serrano pepper. Season the lemon juice with the olive oil.
Serve with tortilla chips and grasshoppers.

PRESENTATION

Serve the guacamole in the molcajete and accompany with tortilla chips and grasshoppers.

TIPS

Press the tejolo in circular movements when grinding the ingredients in the molcajete, never hit it.
