Salmon and Yogurt Croquettes

  • 14 ounces mashed potatoes
  • 1 teaspoon dill, chopped
  • 1 tablespoon FAGE® Total 0% greek style yogurt
  • 7 ounces salmon, cooked in flakes
  • 2 ounces flour
  • 3.5 ounces bread crumbs
  • 3.4 liquid ounces vegetable oil
  • salt, and pepper to taste
  • 1/2 limes, (juice) for the dressing
  • 8.8 ounces FAGE® Total 0% greek style yogurt, for the dressing
  • 1 tablespoon dill, chopped, for the dressing

  • Mix the mashed potato, dill, FAGE® Total 0% Greek Yogurt, and cooked salmon.
  • Season to taste and divide into 6 balls.
  • Form patties, coat in flour, then in lightly beaten egg, and finally in breadcrumbs.
  • Chill for 2 hours.
  • To serve, fry the patties until golden brown on both sides.
  • Drain on paper towels and place on a plate with a tablespoon of dressing.
