An easy, quick, economical recipe that both kids and adults will love. I guarantee they will eat nutritious and delicious food. They are ideal for lunch or for eating on hot days as they are a fresh and flavorful dish.
Prepare a potato puree by melting the butter and adding the cooked, peeled, and mashed potatoes, add the milk and season with salt and pepper to taste. It should not be watery, but rather have body so that the croquettes do not break.
To the previously prepared potato puree, add the drained tuna and mix everything well. If you like, you can add finely chopped parsley or cilantro at this moment.
If you decided to use egg, add it now and mix well.
We add a little breadcrumbs to the mixture to reduce moisture and give it consistency.
We form the croquettes with our hands, to the size one prefers; I don't make them too big, as I have small children and they prefer a manageable size for them. If you notice they break due to excess moisture, add a little more breadcrumbs.
We pass the croquettes through beaten egg and finally through breadcrumbs, although I confess that sometimes I don't pass them through beaten egg, I just roll them in breadcrumbs and they turn out very well.
Heat oil to fry the croquettes; it is not necessary to submerge them, just pass them through the oil and let them brown on all sides, this way they won't be too greasy, as they tend to absorb oil.
Place on absorbent paper and serve with a salad of your choice.
