Ingredients

6 portions
  • 1 can Tuna, drained
  • 2 potatoes, Cooked
  • 1 cup milk
  • 2 cups ground bread
  • 1 egg, optional
  • enough parsley, chopped
  • enough oil, to fry
  • salt, and pepper to taste
  • 2 tablespoons butter

Preparation

Prepare a mashed potato melting the butter and adding the potatoes cooked, peeled and crushed, add the milk and season with salt and pepper to taste. It should not be watered down, rather with a body so that the croquettes do not break.
The drained tuna is added to the previously prepared mashed potatoes, everything is mixed very well. If you like you can add parsley or finely chopped cilantro at this time.
If you decided to use egg, at this time you have to add it, mixing well.
We add a little ground bread to the mixture to reduce moisture and give it consistency.
We make the croquettes with our hands, the size that one likes, I do not make them so big, because I have small children and prefer them in a manageable size for them. If they notice that they are broken by excess moisture, add a little more bread crumbs.
We passed the croquettes for beaten egg and at the end for ground bread, although I confess that sometimes I do not pass them through the beaten egg, I just roll them with the ground bread and they look very good.
We heat oil to fry the croquettes, it is not necessary to submerge them, it is simply to pass them through oil and they gild on all sides, so they will not be so greasy, because they tend to absorb the oil.
Place on absorbent paper and serve with salad of your choice.

PRESENTATION

Serve accompanied by a fresh salad and a little lemon in each croquette, you will see that it gives a rich flavor or with ketchup since children love it. You can eat them cold or warm. You can also accompany them with a mayonnaise dressing

TIPS

The mashed potatoes should be with good consistency, not too moist, to be able to form the croquettes without breaking. If you want you can add egg to the mixture, it will make it more nutritious. Optionally you can go through egg whipped each croquette before breading. If you notice that the croquettes break because they are very wet, add more bread crumbs to the mixture, and if it is because they are very dry, add egg.
