Artichoke with Avocado and Lemon Dip

This low-calorie dinner is perfect when you arrive hungry; the citrus avocado dip with hummus and a touch of mustard to dip the artichoke is amazing. With this dinner, you will never go to bed feeling heavy.

  • Heat a small pot of water until it reaches a boil. Immerse the artichoke and cook for 40 minutes until perfectly tender in the center. Remove from the water and set aside.
