Mexican-Style Tuna Eggs

These eggs are a very healthy snack alternative for your whole family as they are packed with protein. They are also a very good and delicious vegetarian option for everyone.

  • 5 eggs, cooked and peeled
  • 1 can tuna, drained
  • 1/2 red onions, medium, finely chopped
  • 1 Jalapeño chile, finely chopped
  • lime juice, about 4 limes
  • 1 tomato, seedless, finely chopped
  • 1 tablespoon olive oil
  • 1 pinch dried oregano
  • salt, and pepper to taste

  • Mix the red onion, jalapeño, lime juice, and oregano. Season with salt and pepper. Refrigerate for 1 hour.
  • Cut the eggs in half vertically.
  • Drain the mixture of red onion and jalapeño. Reserve some lime juice for seasoning if necessary.
  • Combine the tuna, olive oil, tomato, and the mixture of red onion and jalapeño. Season to taste with lime juice, salt, and pepper.
  • Place a bit of the prepared tuna on each half of the egg. Serve cold or warm.
