2 tablespoons red onion, finely chopped, for tartar sauce
1 tablespoon pickles, finely chopped, for tartar sauce
4 tablespoons capers, finely chopped, for tartar sauce
2 tablespoons parsley, finely chopped, for tartar sauce
3 tablespoons lemon juice, for tartar sauce
1 pinch salt and pepper
lemon, cut in half, for serving

Heat a grill over high heat with a tablespoon of olive oil and cook the artichokes until classic grill marks form, season with salt and pepper. Remove and set aside.
For the tartar sauce, in a bowl mix the mayonnaise with the mustard, onion, pickles, capers, parsley, lemon juice, salt, and pepper.
Serve the artichokes with the tartar sauce and accompany with yellow lemon.
