Latkes (Potato Pancakes)

A traditional Hanukkah dish, latkes, also known as potato pancakes, serve as the base for any snack.

  • 4 potatoes, large
  • 2 yellow onion
  • 4 eggs
  • 1/3 cups matza flour
  • 2 tablespoons salt
  • 1 pinch pepper
  • 1 cup peanut oil

  • Peel the potatoes and grate them in a food processor.
  • Then grate the onions. The juice from the onions will prevent the potatoes from oxidizing.
  • Place the grated potato and onion in a towel and squeeze to remove all excess liquid.
  • Put in a bowl and mix with the flour, salt, and pepper. Add the egg and mix.
  • With your hands, form each pancake (about 2 tablespoons of mixture) and place them on a baking sheet.
  • Heat the oil in a skillet and fry the pancakes. Fry for about 3 minutes on each side. Make sure they don’t brown too much on the outside and remain raw on the inside; if this is the case, lower the heat.
