Peel the potatoes and grate them in a food processor.
Then grate the onions. The juice from the onions will prevent the potatoes from oxidizing.
Place the grated potato and onion in a towel and squeeze to remove all excess liquid.
Put in a bowl and mix with the flour, salt, and pepper. Add the egg and mix.
With your hands, form each pancake (about 2 tablespoons of mixture) and place them on a baking sheet.
Heat the oil in a skillet and fry the pancakes. Fry for about 3 minutes on each side. Make sure they don’t brown too much on the outside and remain raw on the inside; if this is the case, lower the heat.
