These little sopes are perfect for satisfying your cravings. You can serve them for breakfast or dinner and why not? as a snack. Feel free to combine your favorite ingredients and delight your palate with this typical Mexican recipe.
For the sopes: Use a glass to form circles about 2 or 3cm thick. Pinch the edges with your fingers to create the borders.
Cook them in a skillet with enough hot oil for deep frying.
Meanwhile, mix the refried beans perfectly with the shredded chorizo that has been previously cooked in a skillet. Season to taste. Add finely chopped onion if desired.
Once fried, place the sopes on paper towels to remove any excess grease.
Spread the bean and chorizo mixture on each one.
Place a tablespoon of cream, chopped lettuce (optional), and sprinkle with Cotija cheese or fresh cheese on each sope.
