Bean and Chorizo Sopes

These little sopes are perfect for satisfying your cravings. You can serve them for breakfast or dinner and why not? as a snack. Feel free to combine your favorite ingredients and delight your palate with this typical Mexican recipe.

  • 500 kilos masa dough
  • 1 cup refried beans, freshly made bayo or black
  • 100 grams chorizo, shredded
  • 1/3 cups sour cream
  • Cotija cheeses
  • fresh cilantro, finely chopped

  • For the sopes: Use a glass to form circles about 2 or 3cm thick. Pinch the edges with your fingers to create the borders.
  • Cook them in a skillet with enough hot oil for deep frying.
  • Meanwhile, mix the refried beans perfectly with the shredded chorizo that has been previously cooked in a skillet. Season to taste. Add finely chopped onion if desired.
  • Once fried, place the sopes on paper towels to remove any excess grease.
  • Spread the bean and chorizo mixture on each one.
  • Place a tablespoon of cream, chopped lettuce (optional), and sprinkle with Cotija cheese or fresh cheese on each sope.
