Tlayuda with Tasajo and Guacamole

  • 4 tortillas, (tlayudas)
  • 2 tablespoons lard
  • 1 can refried beans
  • 250 grams queso fresco, grated
  • 1 avocado
  • 2 handfuls fresh cilantro, (the leaves)
  • 1/2 onions, finely chopped
  • salt
  • 1/2 red onions, sliced
  • 1/4 cecina, or beef tasajo

  • Spread the lard over the tlayudas.
  • Heat the beans in a skillet, cook the tasajo on both sides, and add them to the tlayuda.
  • Sprinkle a little fresh cheese on top of the beans and red onion.
  • With the help of a molcajete, make the guacamole with avocado, finely chopped onion, and cilantro.
  • Add the guacamole to the tlayuda and sprinkle a little cilantro on top.
  • Season with a little salt and heat on a griddle or skillet.
