  • 2 ancho chiles, deveined and hydrated
  • 2 guajillo chiles, deveined and hydrated
  • 1/2 sticks achiote paste
  • 1/4 cups white vinegar
  • 1/2 cups orange juice, sour
  • 4 tablespoons corn oil
  • 1 cup onion, finely chopped
  • 1 cup fresh cilantro, chopped
  • 1 kilo pork tenderloin, in steaks, seasoned with salt and pepper
  • 1/2 onions, sliced
  • 6 limes, cut
  • 1 cup guacamole

  • Blend the chiles, achiote, vinegar, orange juice and set aside.
  • Spread the steaks with the achiote mixture and cover with the rest of the mixture. Let marinate for 2 hours.
  • In a well-heated pan, sauté the sliced onion with a bit of oil.
  • Cut the meat into thin slices and add it to the pan.
  • Form the tacos and serve with onion, cilantro, lime, and guacamole.
