Pour the yogurt along with the whipping cream and the salmon into the blender; blend at maximum speed until the salmon is well broken down.
Pour the mixture into a bowl, season with pepper to taste, add the lemon zest, and mix evenly. Set aside.
Pour about 4 tablespoons of the salmon mixture and add the melted gelatin into a bowl, then mix constantly for a few seconds, as this will help temper the mixture and prevent it from curdling. Next, incorporate the tempered gelatin into the mixture and blend perfectly.
Add the salmon mixture into a rectangular mold or baking dish lined with non-stick plastic, cover with non-stick plastic, and refrigerate the mousse for 4 hours or until set.
Unmold the smoked salmon mousse from the mold and place it on a rectangular plate. Decorate the entire mousse by covering it with salmon slices, then add arugula leaves and sprinkle with chives. Serve with some delicious Whole Grain Habaneras® Crackers.
