Tuna Mousse for Snacking

This recipe is a great option for a tasty snack at a gathering; it will save you in a pinch and is both eye-catching and economical. You can also make it with smoked oysters, ham, chicken, pâté, or whatever you like. If you prefer, you can use cream cheese instead of cream; just add a little milk, and the flavor and consistency will be creamier. It's delicious!

  • 1 can tuna
  • 1 chipotle chile, marinated
  • 4 tablespoons sour cream
  • 2 teaspoons unflavored gelatin, hydrated in 1/4 cup of cold water
  • garlic, to taste
  • salt, and pepper to taste
  • onion powder, to taste

  • Hydrate the gelatin in 1/4 cup of cold water; when it is spongy, put it in the microwave to dissolve, around 20 seconds. If the microwave heats too much, do it in 10-second intervals until the gelatin dissolves well.
  • Blend all the ingredients, except for the gelatin, seasoning to taste; just remember that chipotle chili is very spicy. If you want just a slight flavor, add a little bit, but if you want it spicier, add as much as you like.
  • Once all the ingredients are blended, heat them in a saucepan and add the gelatin, mixing continuously; you will see how it slightly changes color. When everything is perfectly combined, remove from heat.
  • Place the mixture in a lightly greased mold of your choice or in a greased glass flan dish.
  • Refrigerate and wait for it to set; to unmold, gently peel it off with your fingers or with the help of a knife, garnish on a platter, and serve with crackers or bread.
