Portobello Panini with Goat Cheese and Pesto

This delicious vegetarian sandwich features portobello mushrooms, goat cheese, and a green olive pesto. They are very tasty and innovative.

  • 1 basil, bunch
  • 1 tablespoon walnuts
  • 1/2 garlic, clove
  • 1/2 cups extra virgin olive oil
  • 8 portobello mushrooms
  • 4 ciabatta rolls

  • Preheat a sandwich maker.
  • In a food processor, place the basil leaves, olives, garlic, and walnuts. With the processor running, gradually add olive oil until a thick paste forms. Season with salt and pepper.
  • Brush the portobello mushrooms with olive oil and season with salt and pepper. Place the mushrooms on the sandwich maker and cook for 3-5 minutes or until soft and golden. Place on a plate and set aside.
  • Spread the prepared olive pesto over the halved ciabatta breads. Then, place 2 portobello mushrooms on each sandwich followed by a layer of goat cheese. Place the top of the bread and brush everything with olive oil.
  • Place the sandwiches in the sandwich maker and cook until the cheese starts to melt (about 6 minutes).
  • Serve hot.
