In a food processor, place the basil leaves, olives, garlic, and walnuts. With the processor running, gradually add olive oil until a thick paste forms. Season with salt and pepper.
Brush the portobello mushrooms with olive oil and season with salt and pepper. Place the mushrooms on the sandwich maker and cook for 3-5 minutes or until soft and golden. Place on a plate and set aside.
Spread the prepared olive pesto over the halved ciabatta breads. Then, place 2 portobello mushrooms on each sandwich followed by a layer of goat cheese. Place the top of the bread and brush everything with olive oil.
Place the sandwiches in the sandwich maker and cook until the cheese starts to melt (about 6 minutes).
Serve hot.
