Ingredients

4 portions
  • 1 basil, bunch
  • 1 tablespoon walnut
  • 1/2 garlic, tooth
  • 1/2 cups extra virgin olive oil
  • 8 portobello mushrooms
  • 4 ciabatta bread

Preparation

Heat a sandwich maker
In a food processor put the basil leaves, olives, garlic and walnuts. With the processor on, add olive oil little by little until a thick paste forms. Season with salt and pepper.
Varnish the portobello mushrooms with olive oil and add salt and pepper. Put the mushrooms on the sandwich maker and cook for 3-5 minutes or until soft and golden. Put on a plate and reserve.
Put the prepared olive pesto on the ciabatta halves. Next, place 2 portobello mushrooms on each sandwich followed by a layer of goat cheese. Put the lid on the loaves and glaze everything with olive oil.
Put the sandwiches in the sandwich maker and cook until the cheese begins to melt (about 6 minutes).
Serve hot.

TIPS

If you don't have a sandwich maker you can make it in a small oven or direct oven at 350 F or 180 degrees.
