This rich vegetarian sandwich has portobello mushrooms, goat cheese and a green olive pesto. They are very rich and innovative.

Preparation
Heat a sandwich maker
In a food processor put the leaves of basil, olives, garlic and nuts. With the processor on, add olive oil little by little until a thick paste forms. Season with salt and pepper.
Varnish portobello mushrooms with olive oil and add salt and pepper. Put the mushrooms on the sandwich maker and cook for 3-5 minutes or until soft and golden brown. Put on a plate and reserve.
Put the olive pesto prepared on the halves of the chapata bread. Then, place 2 portobello mushrooms in each sandwich followed by a layer of goat cheese. Put the top of the loaves and varnish everything with olive oil.
Put the sandwiches in the sandwich maker and cook until the cheese begins to melt (about 6 minutes).
Serve hot.
