Bienmesabe is a typical marinated dogfish dish from Cádiz, Spain. This is a delicious tapa for lunch or dinner, and it's easy to make, so give this recipe a try.

  • 1 1/2 kilos school shark, fresh, cut into cubes.
  • olive oil
  • 2 cloves garlic
  • 1 tablespoon sweet paprika
  • 2 teaspoons cumin
  • 1/2 cups vinegar
  • fresh parsley, chopped
  • oregano, chopped
  • flour for tempura

  • Peel and finely chop the garlic cloves, then mix with cumin, paprika, parsley, oregano, vinegar, and a little olive oil.
  • In a bowl, place the dogfish and season with a little salt.
  • Cover the dogfish with the previously prepared mixture, add a little water, and let marinate in the refrigerator for at least one night.
  • Remove from the refrigerator and drain very well, coat in flour, and fry in hot oil until golden.
