1 1/2 kilos school shark, fresh, cut into cubes.
olive oil
2 cloves garlic
1 tablespoon sweet paprika
2 teaspoons cumin
1/2 cups vinegar
fresh parsley, chopped
oregano, chopped
flour for tempura

Peel and finely chop the garlic cloves, then mix with cumin, paprika, parsley, oregano, vinegar, and a little olive oil.
In a bowl, place the dogfish and season with a little salt.
Cover the dogfish with the previously prepared mixture, add a little water, and let marinate in the refrigerator for at least one night.
Remove from the refrigerator and drain very well, coat in flour, and fry in hot oil until golden.
