Wheat and Ricotta Croquettes

Delicious wheat and ricotta croquettes to enjoy with friends.

  • 7 tablespoons wheat sprouts
  • 1/2 cups onion
  • 2 green bell peppers
  • 2/3 tablespoons parsley, chopped
  • 1 cup carrot
  • 1/2 cups cow's milk
  • 2 eggs
  • 4 pinches pepper
  • 1 cup requesón
  • 10 tablespoons breadcrumbs

  • Soak the sprouted wheat for 10 minutes.
  • Preheat the oven to 180°C. Finely chop the onion, green pepper, and parsley.
  • Grate the carrot. Drain the sprouted wheat.
  • In a bowl, mix the ricotta; stir until all ingredients are combined.
  • With your hands, form croquettes with the mixture (add breadcrumbs if necessary) and place them on a baking tray.
  • Bake for 10 minutes at 180°C.
