  • Use sushi rice! This rice contains more starch than the rice you have at home and helps to form sushi rolls, cones or spheres as it sticks better. Before cooking it, it is advisable to rinse it in cold water at least 3 times, cover it with water, move with a stick until excess starch, impurities or old rice are removed, as they will float on the surface. You will notice how the water becomes clearer with each wash. Drain.
  • Place the 2 cups of rice with 2 cups of cold water in a pot. It is important to mention that to cook sushi rice, you will always use equal amounts of rice per water, so there is no flaw in the calculation. Now cover and cook over medium-high heat for 11 minutes; it is important not to uncover.
  • After the time, lower the heat to a minimum and cook for 8 more minutes without uncovering. Now, turn off the heat and let it rest for 2 minutes. Uncover and reserve.
