Fish Ceviche with Pineapple

  • 750 grams white fish, boneless and skinless
  • 400 grams pineapple, in cubes
  • 1 red onion, in thin slices
  • 3 serrano chiles, chopped
  • 1 bunch fresh cilantro, chopped
  • 12 limes, (its juice)
  • 1/2 cups corn kernels
  • 1 avocado, in cubes

  • Cut the fish into cubes and cover it with lime juice for 8 minutes.
  • Cook the corn kernels in water with a pinch of salt.
  • Add the onion and pineapple to the fish for another 10 minutes.
  • After the time is up, drain the lime juice.
  • Add the corn kernels, cilantro, avocado, onion, and chili to the fish.
