This is an amazing sushi cake with layers of avocado, tampico, decorated with surimi, cucumber; it is covered with masago and fresh cucumber served with a creamy chipotle sauce with soy sauce. It’s a super original and incredible recipe!
Heat a small pot over medium heat with water, cook the rice for 20 minutes with sugar and rice vinegar until soft.
Spread the rice on a tray to cool. Set aside.
On a board, place a large ring or mold covered with non-stick plastic, grease with sesame oil, place a layer of rice, compress well, add a layer of Tampico, and cover again with a layer of rice. Spread avocado with sesame and cucumber, cover with another layer of rice.
Refrigerate for 20 minutes to give the sushi cake a more uniform consistency. Unmold the cake onto a plate and turn it so that the bottom side is on top.
Decorate the sushi cake with sesame seeds. Cut a slice and serve with soy sauce and creamy chipotle sauce with masago.
