Ingredients: 1 1/2 cups sushi rice; 3 cups water, to cook the rice; 1/8 cups rice vinegar; 1 tablespoon sugar; 1 tablespoon sesame oil, to grease; 2 cups Tampico sauce; 2 avocados; 1 cucumber, cut into cubes; 4 tablespoons black sesame seeds; 1/4 cups chipotle chilli sauce, with masago; 1/4 cups soy sauce, prepared

Heat a small pot over medium heat with water, cook the rice for 20 minutes with sugar and rice vinegar until soft. Spread the rice on a tray to cool. Set aside.
