Fish Carpaccio with Green Olive Sauce

Easy to make recipe, it can be served as a starter on individual plates or on a tray in the center of the table.

  • 2.5 kilos fish, (mere or golden)
  • 6 tablespoons olive oil
  • 3 lime juice
  • 1 1/2 cups mayonnaise, (for the olive sauce)
  • 1 jar pitted green olive, minced (for the olive sauce)
  • 1 1/2 tablespoons mustard, (for the olive sauce)
  • parsley, or cilantro for garnish
  • 3 limes, cut into slices, to garnish
  • salt, and pepper to taste
  • cookies, or toasted bread to accompany

  • Take the fish and slice it very thin. You can ask the fishmonger to slice it.
  • Place the slices on a tray and add the juice of the three lemons, the olive oil, the salt and the pepper.
  • To prepare the olive sauce, place the 1 1/2 cup of mayonnaise, the olives (leaving a little for decoration), the mustard in the blender.
  • Once all the ingredients have been blended, add it to a sauce boat.
  • At the moment of serving, add the olive sauce to the fish, decorating it with the fresh parsley or cilantro, the lemon slices.
  • They accompany it with cookies or whole wheat bread.
