2.5 kilos fish, (number or golden)
6 tablespoons olive oil
3 lime juice
1 1/2 cups mayonnaise, (for the olive sauce)
1 jar pitted green olive, chopped (for the olive sauce)
1 1/2 tablespoons mustard, (for the olive sauce)
parsley, or cilantro for garnish
3 limes, sliced, for garnish
salt, and pepper to taste
cookies, or toasted bread for accompaniment

Take the fish and slice it very thin. You can ask at the fish market to slice it for you.
Place the slices on a platter and add the juice of the three lemons, olive oil, salt, and pepper.
To prepare the olive sauce, place 1 1/2 cups of mayonnaise, the olives (setting some aside for decoration), and the mustard in the blender.
Once all the ingredients are blended, pour it into a sauce boat.
At the time of serving, add the olive sauce to the fish, garnishing with fresh parsley or cilantro, and lemon slices.
Serve with crackers or whole grain bread.
