Fish gratin is an easy and rich recipe. It is a different way of preparing the fish, accompanying it with purple onion, fish broth to make it juicy and gratin cheese. Definitely a dish to suck your fingers.

1 kilo fish fillet, and without thorns
salt and pepper
2 leaves bay, and fresh rosemary
1/2 cups fish broth, or of vegetables
1 cup cow's milk
3 tablespoons cornstarch
1 tablespoon mustard
1/4 cups parsley, chopped
olive oil
2 red onions, slices
2 potatoes, slices
1 cup cheese, grating, of your preference

The salted fillets are placed in a pan with olive oil.
The onion and the
sliced potatoes
, the bay leaves and the fresh rosemary are distributed in a uniform way.
Add the mustard spoonful to the steaks (if you want you can place them in the pot with the mustard spread on the fish).
Broth is added when onions and potatoes are bright, be careful not to stick to the pan.
Then, cover the whole preparation with three quarts of milk, let it break the boil.
Bring to a minimum heat and in a cup place the corn starch or cornstarch with the rest of the milk and dissolve it.
Mixed milk with corn starch is added evenly.
It is cooked for a few more minutes stirring until a cream is made and the grated cheese is added.
When finished, add chopped parsley.
You can accompany it with white rice or steamed vegetables.
