The fish gratin is an easy and delicious recipe. It's a different way to prepare fish, accompanied by red onion, fish broth to keep it juicy, and melted cheese. Definitely a finger-licking dish.

1 kilo fish fillet, and boneless
salt and pepper
2 leaves bay, and fresh rosemary
1/2 cups fish broth, or vegetables
1 cup cow's milk
3 tablespoons cornstarch
1 tablespoon mustard
1/4 cups parsley, chopped
olive oil
2 red onions, slices
2 potatoes, slices
1 cup cheese, grated, of your choice

Place the salted and peppered fillets in a pan with olive oil.
Evenly distribute the onion and sliced potatoes, the bay leaves, and fresh rosemary.
Add the tablespoon of mustard to the fillets (if you wish, you can place them in the pot with the mustard spread on the fish).
Add the broth when the onions and potatoes are glossy, being careful not to stick to the pan.
Then, cover the entire preparation with three-quarters of a cup of milk, and let it come to a boil.
Reduce to low heat and in a cup, place the cornstarch with the remaining milk and dissolve it.
Add the milk mixed with cornstarch evenly.
Cook for a few more minutes, stirring until it becomes a cream, and add the grated cheese.
When finished, add chopped parsley.
You can serve it with white rice or steamed vegetables.
