50 grams achiote
3 guajillo chiles, cleaned and soaked
1 cup pineapple juice
2 cloves garlic
1/4 onions
1 teaspoon oregano
1/2 teaspoons cumin
2 tablespoons vinegar
1 kilo fish fillet
2 tablespoons vegetable oil
salt and pepper
1 package Señor Cactus® nopal and chia tortilla
lime
onion, finely chopped
fresh cilantro
pineapple, grilled
red salsa
Preparation

Blend the achiote with the guajillo chili, pineapple juice, garlic, onion, oregano, cumin, vinegar, salt, and pepper.
In a baking dish, place the fish and pour the previous preparation, let it marinate in the refrigerator for 2 hours.
Heat a grill over medium heat and add oil, place the fish and let it cook for 2 minutes, flip and let it cook for 2 more minutes.
On a griddle, heat the Señor Cactus® Chia Nopal Tortillas.
Place a bit of fish on the Señor Cactus® chia nopal tortilla, add onion, cilantro, and salsa to taste.
