Fish Tacos al Pastor with Grilled Pineapple

Tacos al pastor are our favorites, try a different version with fish, the combination of ingredients that characterize its marinade gives it the perfect seasoning touch to enjoy.

  • 50 grams achiote
  • 3 guajillo chiles, cleaned and soaked
  • 1 cup pineapple juice
  • 2 cloves garlic
  • 1/4 onions
  • 1 teaspoon oregano
  • 1/2 teaspoons cumin
  • 2 tablespoons vinegar
  • 1 kilo fish fillet
  • 2 tablespoons vegetable oil
  • salt and pepper
  • 1 package Señor Cactus® nopal and chia tortilla
  • lime
  • onion, finely chopped
  • fresh cilantro
  • pineapple, grilled
  • red salsa
Preparation

  • Blend the achiote with the guajillo chili, pineapple juice, garlic, onion, oregano, cumin, vinegar, salt, and pepper.
  • In a baking dish, place the fish and pour the previous preparation, let it marinate in the refrigerator for 2 hours.
  • Heat a grill over medium heat and add oil, place the fish and let it cook for 2 minutes, flip and let it cook for 2 more minutes.
  • On a griddle, heat the Señor Cactus® Chia Nopal Tortillas.
  • Place a bit of fish on the Señor Cactus® chia nopal tortilla, add onion, cilantro, and salsa to taste.
