Fish Tacos al Pastor with Pineapple

Craving some al pastor tacos? Prepare this different option with fish marinated in a delicious blend of chiles and accompanied by a tree chili salsa; it will satisfy more than just your craving. They come with pineapple, onion, cilantro, and lemon. Delicious!

  • 2 guajillo chiles
  • 1/4 onions
  • 1/2 cups orange juice
  • 1/4 sticks achiote
  • 1 clove garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 6 fish fillets, cut into strips
  • 10 árbol chiles
  • 2 guajillo chiles
  • 2 cloves garlic
  • 2 tomatillos
  • water
  • 2 tablespoons vegetable oil
  • 12 corn tortillas, blue
  • 4 slices pineapple
  • onion
  • fresh cilantro
  • lime

  • For the marinade, blend the guajillo chili, onion, orange juice, achiote, garlic, cumin, oregano, and salt.
  • Pour the previous preparation over the fish and marinate for 30 minutes.
  • For the salsa, in a pan, fry the tree chiles, guajillo chili, garlic, and tomatoes. Blend with a little water if necessary. Set aside.
  • In a medium heat skillet, add oil and cook the fish for 5 minutes or until well cooked.
  • In a griddle, heat the tortillas and serve the fish, accompanied by grilled pineapple, onion, cilantro, salsa, and a little lemon.
