Gourmet cod

A gourmet version of the traditional Christmas cod. Ideal for Christmas dinner.

  • 1 kilo Langa® cod, no spikes
  • 2 tablespoons Bogador® capers
  • 1 onion, medium finely chopped
  • 7 tablespoons Sierra Gata® olive oil
  • 1 jar Pure In® tomato puree
  • 1 tablespoon sea ​​salt
  • 1/4 cups parsley, chopped
  • 1/4 leaves peppermint, chopped
  • 1/2 cups Excelencia® black olive

  • A secret to remove salt from Langa cod is to immerse a bowl with water and let it rest for 1-2 days, changing the water 3 times a day, leaving the bowl in the refrigerator.
  • Once the fish already has a good taste of salt when tasting, the dish begins.
  • In a pot, pour the Sierra Gata® olive oil and add the onion, until golden brown (3-4 minutes).
  • Add the Bogador® capers, the Pure In® tomato puree, the Excelencia® black olives, the salt and stir until it starts to boil.
  • Add the Langa cod, mint, and parsley and cook until gently cooked (5 minutes).
