Gourmet Cod

A gourmet version of the traditional Christmas cod. Ideal for the Christmas dinner.

  • 1 kilo Langa® cod, bone-free
  • 2 tablespoons Bogador® capers
  • 1 onion, medium finely chopped
  • 7 tablespoons Sierra Gata® olive oil
  • 1 jar Pure In® tomato puree
  • 1 tablespoon sea ​​salt
  • 1/4 cups parsley, chopped
  • 1/4 leaves peppermint, chopped
  • 1/2 cups Excelencia® black olive

  • A secret to remove the salt from Langa cod is to submerge a bowl of water and let it rest for 1-2 days, changing the water 3 times a day, leaving the bowl in the refrigerator.
  • Once the fish has a good salt flavor when tasted, the dish can begin.
  • In a pot, pour in Sierra Gata® olive oil and add the onion, cooking until golden (about 3-4 minutes).
  • Add Bogador® capers, Pure In® tomato puree, Excelencia® black olives, salt, and stir until it starts to boil.
  • Add the Langa cod, mint, parsley, and let it cook until it is gently cooked (5 minutes).
