Fruit and Shrimp Ceviche

  • Pam® Olive, extra virgin olive oil spray
  • 1 cup melon, diced
  • 1 cup pineapple, diced
  • 1 cup strawberries, finely chopped
  • 1 cup blueberry, finely chopped
  • 20 grams peppermint, chopped
  • 500 grams medium-sized shrimp, pack
  • 2 cups orange juice, natural
  • 4 serrano chiles
  • 1 teaspoon garlic, finely chopped
  • 1/3 cups onion, finely chopped
  • salt
  • pepper

  • Mix the already chopped fruits with the shrimp, chopped mint, spray with 2 shots of PAM® Olive, and set aside.
  • Blend the orange juice with the serrano chili, garlic, and add to the fruit mixture.
  • Incorporate the chopped onion, season with salt and pepper, and let it rest for a couple of hours.
