800 grams sole fillet
2 tablespoons orange bell pepper, chopped
4 cubes ice cubes
1 cup lime juice
1 cup red onion, in fine julienne
1 cup ear corn, de-shelled
4 cups sweet potato, cooked

Cut the sole into two-centimeter cubes and place them in a cold deep plate.
Season with salt, the orange pepper, and ice cubes.
Mix well and add the lime juice.
Let it rest for 30 seconds and remove the ice. Then add the washed onion in julienne.
