Peruvian Sole Ceviche

A delicious traditional Peruvian ceviche where the fish is marinated in lime juice, chili (pepper), and red onion.

  • 800 grams sole fillet
  • 2 tablespoons orange bell pepper, chopped
  • 4 cubes ice cubes
  • 1 cup lime juice
  • 1 cup red onion, in fine julienne
  • 1 cup ear corn, de-shelled
  • 4 cups sweet potato, cooked

  • Cut the sole into two-centimeter cubes and place them in a cold deep plate.
  • Season with salt, the orange pepper, and ice cubes.
  • Mix well and add the lime juice.
  • Let it rest for 30 seconds and remove the ice. Then add the washed onion in julienne.
