A delicious Peruvian traditional ceviche where the fish is marinated in lemon juice, chili pepper and red onion.

Ingredients

4 portions
  • 800 grams sole fillet
  • 2 tablespoons orange bell pepper, chopped
  • 4 cubes ice
  • 1 cup lemon juice
  • 1 cup red onion, in thin julienne
  • 1 cup corn, shelled
  • 4 cups sweet potato, Cooked
  • salt

Preparation

Cut the sole into cubes of two centimeters and throw them into a cold bowl.
Season with salt, orange pepper and ice cubes.
Mix well and add the lemon juice.
Let stand for 30 seconds and remove the ice. Then add the onion washed in julienne.

PRESENTATION

Arrange on the plate with the husked corn and the sweet potato.
