2 kilos fish fillet, (hake or grouper)
4 red onions
8 yellow ajíes, sweet
2 spicy ajíes, optional
3 cups lime juice
6 tablespoons sugar
2 teaspoons salt
leaves lettuce, preferably repollada and fresh cilantro for garnish
cookies, or toasted bread to accompany

Wash the fish well and chop it into cubes.
On the side, finely slice the red onions into julienne strips.
Chop the peppers.
Place in a glass container the lemon juice, sweet peppers, onions, and spicy peppers.
Add the fish to the container, cover it, and let it marinate for approximately 1 1/2 hours. Place it in the refrigerator.
When serving, place lettuce leaves at the bottom of the tray or plate, add the ceviche, and garnish with onions, peppers, and cilantro.
You can accompany it with crackers or on toasted bread.
