Bacon-Wrapped Salmon with Guacamole

  • 1/4 cups lemon juice, for guacamole
  • 1/4 cups Jalapeño chile, finely chopped, for guacamole

  • 1 Habanero chile, for glazing
  • 1 tablespoon ginger, finely chopped, for glazing
  • 1/4 cups honey, for glazing
  • 1/4 cups orange juice, for glazing
  • 2 tablespoons lemon juice, for glazing
  • 10 slices bacon
  • 4 salmon, cut into a 200-gram slice

  • Preheat the oven to 200° C.
  • In a bowl, mash the avocados until pureed, add the yellow lemon juice, jalapeño pepper, cilantro, habanero pepper, salt, and pepper. Set aside.
  • Heat a small pot over medium heat with the butter, cook the garlic and ginger for a few minutes. Add the honey, orange juice, and yellow lemon juice. Cook until reduced and set aside.
  • On a cutting board, place the salmon, season with salt and pepper, wrap with bacon, and bake for 10 minutes. Remove from the oven, add the glaze, and cook for 5 more minutes. Serve with guacamole, yellow lemon, avocado, and greens.
