Grilled Salmon with Mango Pico de Gallo

Healthy grilled salmon recipe accompanied by a super fresh mango pico de gallo with tomato, onion, and cilantro dressed with cold-pressed olive oil with a spicy touch of habanero pepper and citrus from lemon juice. It takes less than 10 minutes to make.

  • 1/2 mangoes, cut into cubes
  • 1/4 cups fresh cilantro, finely chopped
  • 1 tomato, cut into small cubes
  • 1 Habanero chile, finely chopped
  • 1/4 cups red onion, finely chopped
  • 2 lemons, its juice
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon coconut oil
  • 1 salmon

  • In a bowl, mix the mango, cilantro, tomato, habanero pepper with the red onion. Season with lemon juice, olive oil, salt, and pepper.
  • Heat a grill over medium heat, add coconut oil, and add the seasoned salmon to your taste with salt and pepper until perfectly cooked. Remove the salmon from the heat.
  • Serve the salmon with pico de gallo and some lemon slices. Serve and enjoy.
