Japanese Salmon

Include this salmon recipe in your menu, or as a different dish for a special occasion with this step-by-step guide. To prepare it, you will need to marinate the salmon with a sauce made from sweet miso, mirin or sake, rice vinegar, soy sauce, ginger, sesame oil, and garlic. To achieve crispy skin, leave it on the heat until the skin looks golden brown.

  • 4 salmon, with skin (200 g each)
  • 2 tablespoons chives, finely chopped
  • coarse salt
  • black pepper
  • sesame seeds
  • 1/4 cups sweet miso, (can be substituted with teriyaki to glaze) for the sauce
  • 1/4 cups mirin (sweet rice wine), or sake for the sauce
  • 2 tablespoons rice vinegar, for the sauce
  • 3 tablespoons soy sauce, for the sauce
  • 2 tablespoons fresh ginger, finely chopped for the sauce
  • 1 tablespoon garlic, fresh, finely chopped for the sauce
  • 1 tablespoon sesame oil, for the sauce

  • Prepare your Weber® grill for medium direct heat (350° - 450 °F or 175° - 232 °C).
  • In a bowl, stir the sauce ingredients until well combined, and marinate the salmon in it for 30 minutes in your refrigerator.
  • Place the salmon on your grill over medium direct heat, skin side down for 8 to 10 minutes, or until the internal temperature reaches 135 °F, or the skin is crispy.
  • Remove the salmon from the grill. To serve, garnish with chives and sesame seeds to taste.
