Salmon in Spicy Coconut Sauce

  • 2 guajillo chiles, chopped, for the coconut sauce
  • 2 árbol chiles, for the coconut sauce
  • 1 head garlic, small, with skin, for the coconut sauce
  • 1 onion, cut into quarters, for the coconut sauce
  • 2 tablespoons ginger, finely chopped, for the coconut sauce
  • 1/4 cups fresh cilantro, the root, for the coconut sauce
  • 1 tablespoon cumin powder, for the coconut sauce
  • 2 tablespoons paprika, powder, for the coconut sauce
  • 1 tablespoon turmeric, for the coconut sauce
  • salt and pepper, for the coconut sauce
  • 1/4 cups cream cheese, for the coconut sauce
  • 1 cup coconut milk, for the coconut sauce
  • 1 tablespoon coconut oil
  • 1 salmon, skinless, cut into 4 fillets of approximately 200 g

  • For the sauce, heat a pan over medium heat with coconut oil, cook the guajillo chili, árbol chili, garlic, onion, ginger, cilantro root, cumin, paprika, and turmeric. Season with salt and pepper, roast and peel the garlic.
  • Blend the previous preparation with cream cheese and coconut milk. Set aside.
  • Melt the coconut oil in a pan over medium heat and cook the salmon with a little salt and pepper on both sides until golden. Add the árbol chilis, once they are shiny, remove them along with the salmon.
  • Right there, add the sauce and let it come to a boil. Add the coconut cream, cook for 10 minutes or until thickened, incorporate the salmon and chilis, cook for 5 more minutes and remove.
  • Serve the salmon, garnish with árbol chili and fresh cilantro.
