Ingredients

4 portions
  • 2 tablespoons coconut oil
  • 2 guajillo chilies, chopped
  • 2 chile de árbol peppers
  • 1 head garlic, small, with the shell
  • 1 onion, cut in quarters
  • 2 tablespoons ginger, finely chopped
  • 1/4 cups fresh coriander, , the root
  • 1 tablespoon cumin powder
  • 2 tablespoons paprika, powdered
  • 1 tablespoon turmeric
  • enough salt and pepper
  • 1/4 cups cream cheese
  • 1 cup coconut milk
  • 1 tablespoon coconut oil
  • 1 Salmon, without the skin, cut into 4 fillets of approximately 200 g
  • enough Chile de árbol pepper
  • 1 cup coconut cream
  • enough fresh coriander

Preparation

For the sauce, heat a pan over medium heat with the coconut oil, cook the guajillo chile, the chile árbol, the garlic, the onion, the ginger, the cilantro root, the cumin, the paprika and the turmeric. Season with salt and pepper, withdraw and peel the garlic.
Blend the previous preparation with cream cheese and coconut milk. Reservation.
Melt the coconut oil in a skillet over medium heat and cook the salmon with a little salt and pepper on both sides until golden brown. Add the chiles árbol, once they are bright, remove them along with the salmon.
Right there, add the sauce and let it boil. Add the coconut cream, cook 10 minutes or until thicken, add the salmon and chilies, cook 5 minutes more and remove.
Serve salmon, garnish with fresh chili and cilantro.

PRESENTATION

Serve the salmon with the sauce, decorate with chile árbol and cilantro.

TIPS

It is important that, when sautéing, you cook the garlic with the peel well so that it cooks completely. Peel and blend with the rest of the ingredients.
