Pour the olive oil into a Jade Cook® skillet and fry the onion and garlic for 5 minutes. Remove from heat.
Blend the fried garlic and onion with the mango, coconut milk, curry, and water for 5 minutes or until a smooth sauce is obtained and set aside. Season with salt and pepper.
Pour olive oil into a Jade Cook® skillet and cook the salmon over medium-high heat for 5 minutes on each side, until it has a golden crust. Add the sauce to the salmon, covering it completely, cover, and cook over medium-low heat for 5 more minutes.
