Pour the olive oil into a Jade Cook® pan and fry the onion and garlic for 5 minutes. Remove from heat.
Blend the previously fried garlic and onion with the mango, coconut milk, curry and water for 5 minutes or until you get a smooth sauce and set aside. Season with salt and pepper.
Pour olive oil in a Jade Cook® skillet and cook the salmon over medium-high heat for 5 minutes on each side, so that it has a golden coating. Add the sauce to the salmon covering it completely, cover and cook over medium-low heat for 5 more minutes.
Serve in the same Jade Cook® pan and decorate with coriander leaves and yellow lemon slices.
