Pour the olive oil into a Jade Cook® skillet and fry the onion and garlic for 5 minutes. Remove from heat. Blend the fried garlic and onion with the mango, coconut milk, curry, and water for 5 minutes or until a smooth sauce is obtained and set aside. Season with salt and pepper.
