Salmon with Mango Sauce

  • 2 fresh salmon, pieces of approximately 150 g
  • 1 red onion
  • 1 red bell pepper, or bell pepper
  • 1 cup mango, in small pieces
  • 1 avocado
  • 2 limes
  • 1/2 oranges
  • 2 tablespoons olive oil
  • salt and pepper
  • 4 potatoes
  • 2 tablespoons butter
  • 1/2 cups Parmesan cheese, grated
  • 1/3 cups cow's milk
  • paprika
  • parsley, dry

  • For the sauce, cut the onion, bell pepper, avocado, and mango into very small cubes.
  • Place the previous ingredients in a bowl and squeeze the two lemons and the orange. Chop the cilantro and add it. Reserve in the refrigerator.
  • For the salmon, season the fillets with salt and pepper. In a hot grill, add a tablespoon of olive oil, place the fillets over medium heat for 4 minutes on each side. Remove from heat.
  • For the mashed potatoes, peel the potatoes and cut them into cubes.
  • Cook the potatoes until they are soft. In a bowl, mix the potatoes, butter, Parmesan cheese, and salt to taste.
  • Add the milk gradually until achieving the desired consistency. Add paprika and parsley to taste.
