For the sauce, cut the onion, bell pepper, avocado, and mango into very small cubes.
Place the previous ingredients in a bowl and squeeze the two lemons and the orange.
Chop the cilantro and add it. Reserve in the refrigerator.
For the salmon, season the fillets with salt and pepper. In a hot grill, add a tablespoon of olive oil, place the fillets over medium heat for 4 minutes on each side. Remove from heat.
For the mashed potatoes, peel the potatoes and cut them into cubes.
Cook the potatoes until they are soft. In a bowl, mix the potatoes, butter, Parmesan cheese, and salt to taste.
Add the milk gradually until achieving the desired consistency. Add paprika and parsley to taste.
