40 shrimp, grilled (5 per person)
3 tablespoons honey
1 1/4 cups orange juice, strained
1/4 cups lime juice, strained
1/3 cups soy
1 tablespoon cornstarch, dissolved in 1/4 cup of water
1 can chipotle chile, chopped with its broth
1 cup fresh cilantro, chopped (only the leaves)

Mix the honey, orange juice, lemon juice, soy sauce, and chopped chipotle pepper (with a little of its broth).
Place over medium heat and let the honey dissolve and come to a boil.
Add the cornstarch already dissolved in the water.
Let the sauce boil until it thickens; it should remain light.
Clean the shrimp (remove the shell and the vein) and butterfly them. Wash and season with salt and pepper.
Put a little olive oil in a skillet and cook the shrimp until they are pink. Remove from heat and set aside.
Arrange the shrimp on a serving plate and pour the sauce over them. Sprinkle with chopped cilantro and serve.
