Shrimp with Chipotle, Orange, and Honey Sauce

A recipe for shrimp in a spicy chipotle sauce with citrus notes and a touch of honey, served with white rice.

  • 40 shrimp, grilled (5 per person)
  • 3 tablespoons honey
  • 1 1/4 cups orange juice, strained
  • 1/4 cups lime juice, strained
  • 1/3 cups soy
  • 1 tablespoon cornstarch, dissolved in 1/4 cup of water
  • 1 can chipotle chile, chopped with its broth
  • 1 cup fresh cilantro, chopped (only the leaves)

  • Mix the honey, orange juice, lemon juice, soy sauce, and chopped chipotle pepper (with a little of its broth).
  • Place over medium heat and let the honey dissolve and come to a boil.
  • Add the cornstarch already dissolved in the water.
  • Let the sauce boil until it thickens; it should remain light.
  • Clean the shrimp (remove the shell and the vein) and butterfly them. Wash and season with salt and pepper.
  • Put a little olive oil in a skillet and cook the shrimp until they are pink. Remove from heat and set aside.
  • Arrange the shrimp on a serving plate and pour the sauce over them. Sprinkle with chopped cilantro and serve.
