Heat sesame oil in a pan over medium-high heat, then add garlic, ginger, and chili. Cook for 2 minutes and then add the shrimp, cooking for 5 minutes on both sides. Remove from heat and set aside.
Place the noodles in a pot over medium heat and add water to cover, season with salt. Then, add the shrimp broth, rice wine, sake, and soy sauce. Cook for 5 minutes until the noodles are ready. Adjust the seasoning.
Lower the heat and add the shrimp preparation. Cook for 2 minutes.
Serve the shrimp ramen in a deep plate, but try to make all the ingredients visible. Garnish with sliced green onions and the stalk.
