Christmas-style Vizcaina Tuna

  • 4 cans tuna
  • 500 grams Roma tomato, roasted, peeled, and chopped
  • 250 milliliters tomato purée
  • 1/2 onions, chopped
  • 1 clove garlic
  • 1 can bell pepper
  • 1 can green olives
  • 2 ladles parsley, finely chopped
  • olive oil
  • 1 teaspoon sugar
  • 1 potato, large cooked cut into cubes

  • In a pot with olive oil, sauté the garlic, remove and set aside. In the same pot, sauté the onion and add fresh tomato, let it cook for a while.
  • Add the tomato puree, ½ can of peppers, and let it season, add half a teaspoon of sugar and add the parsley.
  • Add the Dolores® canned tuna in water to the sauce, add the green olives and the other half of the peppers, and let it boil.
  • Garnish with a little parsley and serve.
