Grilled Tuna

  • extra virgin olive oil
  • 1 tablespoon garlic, finely chopped
  • 1 teaspoon oregano
  • 3 tablespoons cilantro, finely chopped
  • 3 tablespoons parsley, finely chopped
  • 1 teaspoon red bell pepper
  • salt
  • 1/2 cups olive oil
  • 2 tuna steaks, of 250 g each
  • 1/2 cups pumpkin, in thick slices
  • 1/2 cups asparagus
  • 1/2 cups carrot, in thick strips

  • Heat the olive oil in a pan over medium heat and add the garlic, oregano, cilantro, parsley, and red pepper. Mix well, cook for 2 minutes, and remove from heat.
  • Pour the mixture into a bowl, let it cool, and season with salt. Add the olive oil in a steady stream, mix with a whisk, and set aside.
  • Place the tuna steak on a cutting board and brush the previous preparation on both sides.
  • On a grill or griddle over high heat, heat olive oil and place the previously marinated tuna. Cook for 5 minutes on each side or until golden brown or to your desired doneness. Remove from heat and set aside.
  • To accompany: On the same grill, cook the vegetables for 2 minutes on each side. Remove from heat.
  • Serve the grilled tuna on a plate, accompany with the vegetables, and drizzle with the mixture you prepared at the beginning.
