Chicken Sandwich

  • 1 Eva® butterhead lettuce
  • 2 avocados, for the avocado layer
  • 1/2 tablespoons onion powder, for the avocado layer
  • 1/4 cups lime, for the avocado layer

  • 1 tablespoon oregano, for the avocado layer
  • 2 cups chicken, cooked and shredded
  • 1/4 cups red onion, in strips for the chicken
  • 1/4 cups celery, finely chopped for the chicken
  • 1/2 cups red bell pepper, chopped for the chicken
  • 1/2 cups Golden Delicious apple, in cubes for the chicken
  • 1/4 cups walnuts, finely chopped for the chicken
  • 1/2 cups sour cream, low-fat for the chicken
  • 3 tablespoons Greek yogurt, for the chicken
  • 2 tablespoons mustard, for the chicken
  • 1/4 cups lime juice, for the chicken
  • salt, for the chicken

  • 1 bag wholemeal bread, multigrain boxed bread with no crusts
  • 1 cup tomato
  • 1 cup cucumber
  • 1 cup low-fat cream cheese, in squares for topping
  • 1/4 cups Greek yogurt, for topping
  • 2 tablespoons honey, for topping

  • For the avocado layer, blend the avocado with onion powder, lemon, cilantro, and oregano; season with salt and pepper until completely mixed. Set aside.
  • For the chicken layer, in a bowl mix the shredded chicken with red onion, celery, bell pepper, yellow apple, walnuts, low-fat cream, Greek yogurt, mustard, and lemon juice; season with salt and pepper. Set aside.
  • In a rectangular container covered with plastic wrap, place the slices of bread pressing the edges to join them together.
  • Spread a bit of the avocado mixture over the base of the bread until perfectly covered; arrange slices of cucumber and then cover with French lettuce Eva®. Place more bread to start the second layer, pour in the chicken filling and cover with bread again, spread with avocado and place slices of tomato and more French lettuce Eva®. Add another layer of bread and refrigerate for 10 minutes.
  • Cream the low-fat cream cheese and mix it with the Greek yogurt and honey.
  • Cover the sandwich with the cheese mixture, decorate with colorful cherry tomatoes and cucumber. Refrigerate for another 15 minutes and it's ready.
