Chilorio Pizza

Making homemade pizza will never be the same after trying this delicious Chilorio Pizza recipe, which is ideal for grilling and achieving a crispy crust.

  • 300 grams tomato sauce, for pizza
  • 200 grams Mozzarella cheese, grated
  • 200 grams chilorio
  • 1/2 red onions, cut into strips
  • fresh cilantro
  • 315 grams wheat flour, for the dough
  • 180 milliliters water, for the dough
  • 6 grams yeast, for the dough
  • 30 grams olive oil, for the dough
  • 1 teaspoon salt, for the dough
  • 1 pinch sugar, for the dough

  • In a bowl, combine all the ingredients for the dough until fully incorporated. Knead until the mixture is no longer sticky and let it rest for 2 to 4 hours or until it doubles in size.
  • Prepare your Weber® grill for medium direct heat (350º - 450ºF or 175º - 232ºC), aiming to maintain the temperature as close to 350ºF or 121ºC as possible. Place the Weber® Pizza Stone over direct heat and preheat for 15 minutes.
  • Divide the dough into 4 equal parts and roll each one out to form a not-too-thick circle. Transfer one dough circle to the pizza stone and close the lid of your grill. Cook for 5 to 7 minutes.
  • Remove the dough from the grill and on the cooked side, add the tomato sauce, cheese, chilorio, and onion. Return the pizza to the stone and grill for an additional 7 to 10 minutes or until the cheese is melted, being careful not to burn the pizza.
  • Remove the pizza from the grill, let it rest for 2 minutes, and serve hot. You can accompany it with cilantro and toppings to taste. Repeat the last two steps with the remaining dough.
