In a bowl, combine all the dough ingredients until fully incorporated. Knead until the mixture is no longer sticky and let it rest for 2 to 4 hours or until it doubles in size.
Prepare your Weber® grill for direct medium heat (350º - 450ºF or 175º - 232ºC), aiming to maintain the temperature as close to 350ºF or 121ºC as possible. Place the Weber® Pizza Stone over direct heat and preheat for 15 minutes.
Divide the dough into 4 equal parts and roll each one out to form a not-too-thick circle. Transfer one dough circle to the pizza stone and close the lid of your grill. Cook for 5 to 7 minutes.
Remove the dough from the grill and on the side that’s already cooked, add the tomato sauce, cheese, chilorio, and onion. Return the pizza to the stone and grill for another 7 to 10 minutes or until the cheese is melted, being careful not to burn the pizza.
Remove the pizza from the grill, let it rest for 2 minutes, and serve hot. You can garnish with cilantro and toppings of your choice. Repeat the last two steps with the remaining dough.
